• Controlling humidity and temperature;

• Making sure that wrapping materials can be handles reliably on fast and complex machinery.

Other safety fears are well documented, for example, Salmonella in a large chocolate manufacturer's production line.  Also chemical hazards could be introduced.  All these have to be detected on production lines making millions of sweets a day.
